Nidwalden Bratchäs from the frying pan

Traditional festivities in Nidwalden are invariably accompanied by the obligatory Bratchäs, especially carnival and the Älplerchilbi herdsmen's autumn fair.

Ingredients

  • 1.5 dl white wine, apple cider or apple juice
  • 500 g grated Nidwalden Bratchäs
  • wholemeal bread cut into 1 cm slices or boiled potatoes

Preparation

  1. Grate the cheese or cut it into fine slices
  2. Slowly heat the wine, cider or juice in a frying pan.
  3. Sprinkle the cheese over it and stir slowly, allowing the cheese to melt over a low heat until you end up with a creamy mixture.
  4. Spread the melted cheese over the bread or potatoes.
