Traditional festivities in Nidwalden are invariably accompanied by the obligatory Bratchäs, especially carnival and the Älplerchilbi herdsmen's autumn fair.
Ingredients
1.5 dl white wine, apple cider or apple juice
500 g grated Nidwalden Bratchäs
wholemeal bread cut into 1 cm slices or boiled potatoes
Preparation
Grate the cheese or cut it into fine slices
Slowly heat the wine, cider or juice in a frying pan.
Sprinkle the cheese over it and stir slowly, allowing the cheese to melt over a low heat until you end up with a creamy mixture.
Spread the melted cheese over the bread or potatoes.
