Nidwalden gingerbread

  • 200 g thickened pear juice ("Birnel")
  • 600 g sugar
  • 7 dl milk
  • 30 g gingerbread spices
  • 700 g wholemeal flour
  • 7 g bicarbonate of soda


  1. Mix the pear juice, sugar, milk and gingerbread spices well.
  2. Then add the flour and bicarbonate and mix well.
  3. Pour the mixture into a cake tin lined with baking parchment and bake at 180°C for approx. 45 minutes.
