Grate the apples and melt the butter. Mix all the ingredients well except the puff pastry and egg yolk.
Cut the puff pastry into 5 cm wide triangles. Brush the edges with water.
Spoon the filling onto a puff pastry triangle and shape.
Place another triangle on top as a lid. Use a fork to press the edges together all around.
Coat with the egg yolk and bake at 180°C for 20 minutes.
Alpenrestaurant Wirzweli
The Alpenrestaurant Wirzweli opens in the summer between May and late October. The original puff pastry witch's hat can be enjoyed at the Alpe z'Morge brunch.
